Full job description

KEY RESPONSIBILITIES:Develop protein/energy/nutrition bars and functional foods, with expertise in binding systems, texture, moisture management, processing and shelf life.Lead formulation development and optimization of protein products including protein blends, flavor masking, solubility/dispersibility, mouthfeel and nutritional performance.Develop and optimize food, functional food, beverages, RTM/RTD/RTE and nutritional products through laboratory and pilot-scale trials.Conduct market benchmarking, prototype development and sensory evaluation to deliver consumer-acceptable products.Evaluate ingredients and technologies for functionality, quality, nutrition and commercial feasibility; identify alternate ingredients for cost optimization.Develop process parameters, conduct pilot/plant trials and scale-up, and troubleshoot formulation/manufacturing issues related to solubility, texture, viscosity, binding, stability and processing.Plan and monitor stability and shelf-life studies and support product specifications and technical documentation.Ensure formulations and product information align with FSSAI requirements, labelling and applicable claims.Collaborate with Quality, Regulatory, Manufacturing, Procurement, Packaging and Marketing teams.
