Job Description

Prepare and cook food items according to established recipes, plating standards, and presentation guidelinesManage and oversee assigned kitchen station, ensuring efficient workflow and consistent quality outputMaintain the highest standards of food hygiene, safety, and sanitation in accordance with hotel policies and local regulationsAssist in menu development and contribute creative ideas for seasonal dishes and special offeringsMonitor food costs and portion control to minimise waste and maintain profitabilityCollaborate effectively with the Chef de Partie and kitchen team to ensure seamless service during all meal periodsTrain and mentor junior kitchen staff, providing guidance on cooking techniques and kitchen proceduresConduct quality checks on ingredients and finished dishes to ensure compliance with Fairmont standardsMaintain accurate inventory records and communicate stock requirements to the Head ChefPrepare mise en place and ensure all necessary ingredients and equipment are ready before serviceRespond promptly to special dietary requirements and guest requests with professionalism and attention to detailParticipate in kitchen deep cleaning and maintenance activities to uphold facility standardsSupport the kitchen team during peak service periods and special events or banquets

Qualifications

**Required Qualifications:**

Diploma or certification in Culinary Arts or equivalent professional culinary trainingMinimum 3-5 years of experience working in a professional kitchen environment, with at least 2 years in a Demi Chef de Partie or similar supervisory roleProficiency in food preparation, cooking techniques, and plating standardsStrong knowledge of food safety, hygiene regulations, and sanitation protocolsDemonstrated ability to manage a kitchen station independently and efficientlyExcellent organizational and time management skillsAbility to work effectively in a fast-paced environment during peak service periods
